Christmas 2023 at Hotel Adler Asperg

At the Hotel Adler Asperg, we have already started our Christmas preparations so that our guests can make the most of Christmas and New Year with families, friends and colleagues

In addition to corprate Christmas parties, we will offer Christmas menus on December 25th and 26th, as well as a special New Year's Eve dinner on December 31st. 

On December 25th and 26th, our guests can enjoy a Christmas menu with a starter, soup, main course and dessert in the Schwabenstube. We will also offer a three-course menu where you can choose between a starter or soup. 

Here are the courses to choose from:

Starters and soups

  • Ludwigsburg lamb's lettuce with pear and mustard dressing, pickled pear and Frisian blue, roasted walnuts and croutons
  • Venison terrine with pistachio, cranberries and mace, served with pumpkin chutney and a winter salad bouquet
  • Ice sea trout - hot smoked - with wild cauliflower and mango, horseradish cream and chervil vinaigrette
  • Essence of Charolais beef with herb ragout and own meat garnish
  • Carrot and orange soup with roasted sesame seeds and coconut foam

Main courses

  • Leg of venison - from local hunting - braised leg with game cream sauce, cold stirred cranberries, white wine pear, red cabbage and melted spaetzle
  • Christmas goose with orange-spice jus, baked apple, red cabbage, bread & potato dumplings and glazed chestnuts
  • Duo of pasture-raised beef with a slice of loin and ragout of cheek in a strong port wine sauce, with wintery, glazed vegetables and potato gratin
  • Sea bass on lobster risotto with tossed baby spinach, pickled cherry tomatoes and lemon foam
  • Gratinated small pumpkin filled with ragout of French lentils and mushrooms, fine pumpkin vegetables, pumpkin foam and Belper tuber

Desserts

  • Dessert variation with Valrhona chocolate mousse, raspberry parfait and champagne sorbet
  • Champagne sorbet in a crispy coating
  • Creme brûlée of lavender-honey and tonka bean with pineapple-papaya ragout and passion fruit sorbet
  • Selection of raw milk cheeses from the Fromagerie Tourrette in Strasbourg

For our younger guests, we will prepare a special menu with 

  • Flädle soup
  • Wiener schnitzel with snow peas and carrots, French fries and lemon wedge
  • Warm chocolate brownie with berry ragout and vanilla ice cream
