Buffalo burrata with iced watermelon soup, an ideal dish for summer
The "colourful" dishes are among the best things in summer, such as the Burrata with iced watermelon soup, a simple dish that goes well with warm days and is similar to Spanish gazpacho.
For the recipe we need the following ingredients: 600g watermelon without seeds, 200g red pepper roughly chopped, 2 stalks of celery, 300g tomatoes, 300g cucumber, 150ml olive oil, 1 green chilli pepper without seeds, salt, pepper and a little apple cider vinegar.
The ingredients are mixed simultaneously in a stand mixer and seasoned with salt, pepper and apple cider vinegar. Then strain the liquid through a sieve and chill.
After bringing the burrata to room temperature, cut it in half and season it with salt and pepper, place it in a deep plate. Then pour the watermelon soup with the melon cold dish. You pour a little olive oil over it and serve it with two slices of toasted bread.
