In the restaurants of the Adler Asperg, our guests can taste regional as well as international cuisine. Using local and regional ingredients, traditional dishes such as the "Wild Pike-perch from the Rhine" are interpreted in a modern way and served in the Schwabenstube.
The Kuhn Fishery in Karlsruhe catches the fish itself in the Rhine river in the area between Karlsruhe and Mannheim. Then they deliver the pike-perch fresh. It is then cooked on a grill plate and under a metal gloul so that it stays juicy. The steam that is created during the frying process cooks the fish on the side that is not sizzling on the grill.
Wild pike-perch from the Rhine is a refined dish that, apart from the fish fillet, consists of the following seven other ingredients:
- Mashed potatoes with asparagus pieces
- Steamed wheat grains
- Crushed pumpernickel dressed with wheat, lemon oil, chives and salt
- Sauce of shallots, white wine, cream and vin jaune
- Milk foam of roasted hazelnuts and rosemary
- Borage sprouts
- Imperial caviar
This dish can be ordered as a main course or as part of the Adler menu at Schwabenstube. Indeed, you can eat fresh and delicious fish in southern Germany!
