Culinary highlights: Parmigiano-Reggiano creations by Moritz Feichtinger

This month, we would like to introduce you to two special dishes created by our chef Moritz Feichtinger to mark Parmigiano Reggiano Day. Both creations are carefully coordinated and offer a special taste experience that highlights the different flavours and textures of Parmigiano Reggiano and reinterprets them in a creative way.
The Parmesan trio tempts with three unique components that are harmonised with each other. A Parmesan tartelette with veal tartare, Parmesan ice cream, pear cream and Parmesan chip. There is also a profiterole filled with pear and a macaron filled with smoked paprika and a white chocolate parmesan ganache.
The porcini mushroom gnocchi also showcase the elegance of Parmigiano Reggiano in an autumn-inspired porcini mushroom gnocchi dish with roasted and marinated porcini mushrooms, confit egg yolk, Parmesan foam and a Parmesan chip.
